That does seem a lot of spacers. They are all different but mine doesn't have any. How do the sills fit in relation to the fixing holes in the rear tub and the front bulkhead leg? Have the footwells been replaced?

As Jamie has said, that is a lot of spacers. Ensure the bulkhead is mounted vertically and measure the gap between the bulkhead a post and the tub top panel front edge fold top and bottom. Mine measures 874mm, and so does the one here at work I put the tub on after chassis work.
Ensure the tub is sat level. A string line from the back of the tub where the top panel sits on the top of the lower tub through to the top front corner of the front wing, should see the tub panel gap sit level with the string, as should the top edge of the front wing.

The string line can just be seen in this pic, being held in place by the blue masking tape.

I really envy you guys with your spacious workshops.

Some solid advice there gentlemen thanks! I’ll get back up to the workshop on Sunday and I’ll post pictures of the results! I’ve ordered a new gearbox tunnel so I’m hoping that helps the situation there! The footwells are replacements, to be honest a lot of the body panels have been which makes me very nervous

Don't envy me Jamie, thats an old chicken shed where I work that is used as a workshop. I like you work on the driveway on my own vehicles, with parts scattered throughout the house. Although I have now managed to get most of the larger bits into the garage after a clear out.

So not actually sure what that means! To me perhaps the front needs to come up or maybe take a few washers out of the bulkhead bolt

At first glance I would say that the front of the tub is sitting a little high, the front wing looks to be sitting a bit high at the rear judging by the gap to the A panel, and low at the front.
How many spacer shims have you got under the bolts at the front of the tub, marked in red in my pic? Measure from the points marked with yellow arrows to the face of the bulkhead, they should be the same. If the top is slightly further away than the lower point where the tub angles down and forwards, the bulkhead needs lowereing at the front. If it is closer add a shim to raise it and re-check.
How many rubber spacers have you got under the radiator panel at it's mounting bolts? Marked with arrows in my pic. I put one under the radiator panel on this lightweight's rebuild, my other had two at each point when I took it apart. (Yet to go back together.) if none you can add some to raise the panel and the front of the wing.
You should have the bubble in the same position on a spirit level when placed on the tub side panel as when placed along the top of the front wing. Or the same angle if you've got one of those fancy digital gauges or phone apps.

I was messing around today I removed two washers on the drivers side so now both sides have four washers. Thisean bow the floor holes just about align. I was looking at my string longer again and when I lift it from the front wing everything lines up, apart from the very front now looks 12mm to low. I’ve taken a picture so you can see

So I have no shims under the front of the rear tub it’s tight, I’ve measured the bulkhead to the rear tub and all 3 points measure up the same which is good news. I’m tempted to elongate the holes on the hinge to free some space between the door and the bulkhead. As it stands the door to bulkhead gap is very tight
